ButterScotch Blondies

A blondie is a rich, sweet dessert bar. A Southern chef with a musical bent had a preference for brown sugar over granulated and created these "butterscotch bar" cookies in 1982 after watching the MTV video for Heart of Glass by the pop group Blondie.Blondies may contain white or dark chocolate chips, but the dominant flavor of a blondie is brown sugar, not chocolate. They may also contain other ingredients such as coconut, nuts, toffee, or any other chunky candy.Blondies are sometimes served in sundaes, often topped with caramel sauce.

Ingredients:

2 Cups unbleached all-purpose flour
2 Teaspoon baking powder
1/2 Teaspoon salt
1 Cup ( 2 sticks) unsalted butter
2 Cups firmly packed dark brown sugar
2 Large eggs
2 Teaspoons pure vanilla extract
1 1/2 Cups chopped walnuts (optional)
2 cups Butterscotch Chips

Method:

1.Preheat the oven to 350 degree Fahrenheit. Line a 9 by 13 inch baking pan with heavy-duty aluminium foil, making sure that the foil is tucked into all the corners and that there is at least 1 inch overhanging the top of the pan on all sides.
2. Combine the flour, baking powder, and salt in a small bowl.
3. Melt the butter in a medium saucepan over low heat. Remove it from the heat and stir in the brown sugar until it is dissolved.
4. Transfer the butter mixture to a large bowl and stir in the eggs and vanilla.
5. Stir in the flour mixture until just incorporated. Stir in Butter scotch Chips.
6 .Pour the batter into the prepared baking pan. Bake the blondies until they are just set in the center,25 to 30 minutes.
7. Let them cool completely in the pan on a wire rack.
8. Grasping the overhanging foil on either side of the pan, lift out the blondies and place them on a cutting board.
9. Cut them into 36 pieces and peel them from the foil.
