Dahi Vada

Dahi vada is an pakistani and indian chaat, prepared by soaking vadas in thick yogurt(dahi).Dahi vadas are lentil (urad dal) based savory balls which are covered with frothy fresh curds and sprinkled with spices like chili powder, roasted cumin powder, chaat masala and garnished with Sweet Tamarind chutney.





Ingredients:

For Vada:

1 Cup Urad dal
Salt to taste
Oil to fry

For Dahi :

1 kg thick Dahi (yogurt)
1/2 tsp grated Ginger
Finely chopped coriander leaves
Salt to taste
2 Tbsp sugar
2 tsp Roasted cumin(jeera)powder
1 tsp Red chili powder to taste
a pinch of chaat masala

Tamarind Chutney 
Green coriander chutney
 
Method:
1. Clean, wash and soak the daal overnight.
2. Grind it into smooth thick paste.
3. Add salt to taste.
4. Heat oil in a pan and drop a spoonfuls of batter and fry till golden brown or you can make it like medhu vada .
5. Take the hot vadas and put in cold water for 2-3 minutes.
6. Now take them out of water and with a gentle squeeze drain the water from the vada's and keep them aside.
7. Blend the curd (yogurt) and little water until it is smooth.
8. Add salt,grated ginger, sugar, red chili powder and cumin powder.
9. In a deep dish arrange the soaked vada and pour the prepared dahi over them.
10.Now add tamarind chutney and green chutney or just garnish them with coriander leaves and chat masala

Serve the dahi vadas chilled.





Tips:

1. Do not take fermented tangy curd to prepare the dahi vada .Serve them as soon as you take the curd from fridge.
2. If the curd is bit sour then add some milk to the curd before preparing the dahi vada.
3. Use very little water to grind the vada's, otherwise it will absorb a lot of oil while frying.

It can also be prepared by frying the vada's in boiling water instead of oil . It is more healthier and tastes just the same.
