Vada Sambhar



Ingredients:

1 cup urad daal
2-3 green chillies
1 Tbsp grated ginger
3-4 curry leaves
1 tsp Jeera (cumin) seeds
handful chopped coriander leaves
Salt
Oil

Method:

1. Soak the urad daal in enough water for about 5-6 hours.
2. Drain the water completely from soaked urad daal and grind it to a smooth paste.
3. Grind until the batter turns fluffy .
4. Keep this urad daal batter aside for 3-4 hours and let it ferment a bit.
5. Cut the green chillies very finely, cut the curry leaves into pieces and grate the ginger.
6. Add green chillies, cumin seeds, curry leaves, ginger, coriander leaves .Mix it well and check for taste. Add more salt if necessary.
7. Check to make sure that the oil has reached the correct temperature, by putting in small amount of batter. If there is a sound of a sizzle that means the oil is ready.
8. Take a big lemon size batter on a wet hand . Flatten it and make a hole in between put it in hot oil.
( Be careful while doing this )
9. Fry it on both sides till brown . Remove from oil and drain the excess oil on a paper towel.
10. Serve it hot with some Idli's , Sambhar and chutney.

Tips:
1. If you are grinding the dal in a mixer switch off the mixer in between before it becomes hot. Otherwise the dal will get slightly cooked in the process.
2.You can add a little rice flour if the batter is not the consistency you desire.
